Ingredients:
Hillbilly Coney Sauce:
1 lb hamburger (lean)
4 cups water
12 oz beef stock
4 oz tomato paste
1 tbsp onions (dried)
1 tbsp chili powder
1 tsp kosher salt
1 tsp garlic powder
1 tsp cinnamon
2 tbsp sugar
1/2 tsp cayenne pepper (MILD) / 1 tsp cayenne pepper (HOT)
1 tsp black pepper

And The Rest:
Hot Dogs and Buns
Fresh Chopped White Onion
Mustard
Sweet Pickle Relish
Fine Shred Cheddar Cheese
Instructions:
OK... So this isn't BBQ but we make these while at competitions because you tend to get hungry during those LONG 10-12 hour cooks.
With your clean hands start by adding 4 cups of water, 12oz of beef stock and 1 can of regular tomato paste in a large pot.
Place the raw hamburger in the liquid and use your hands to break all down so there are no chunks.
Add dried onion, chili powder, kosher salt, garlic powder, cinnamon, and cayenne pepper, black pepper, sugar and mix well.
Simmer uncovered over low heat for 2 hours or until the mixture becomes thick and viscous.
Stir often!
Taste for seasoning and spice level; add more to suit your taste.

Optional: Stick Blend sauce for an even smoother texture.

Let cool and store in airtight containers in the freezer.

To build the Hillbilly Coney by placing a hot dog in a bun, add a squirt of mustard on top of the dog, top that with the Coney sauce from this recipe, next layer is for fresh finely chopped white onion, then sweet pickle relish and finally shredded cheddar cheese... Mmmmmmm

This is also great served over spaghetti with shredded mild or extra sharp cheddar and fresh diced onions.
